Norilsk residents developed Arctic gastronomic tourism concept

Norilsk restaurants and cafes owners and managers shared the first results of training at the Institute of Gastronomy of the Siberian Federal University (SFU).

#ARCTIC. #SIBERIA. THIS IS TAIMYR. The educational track is dedicated to building effective communication, restaurant business trends, lean manufacturing, promotion tools, staff search and motivation, financial and tax accounting.

Additional vocational education is organized within the Norilsk Development Agency (NDA) on the gastronomic industry transformation. Classes are conducted by well-known Krasnoyarsk and Russian experts in the field of gastronomy and marketing.

“Norilsk has such an advantage – to be the most severe. And it is in these conditions that truly breakthrough innovations and solutions can be born, which can then be exported to other regions with extreme climatic conditions”, says Irina Avrutskaya, founder of LIKE4LIKE and the GFT AGENCY trend-handling agency.

“We have developed the concept of an Arctic gastronomic resort, which only strong, courageous and interesting personalities dare to visit”, said Anzhela Elmuradova, the CoffeeStory coffee house and the Zharenoye Solntse pancake chain owner.

“I want to open a restaurant in Norilsk – I had a lot of questions to which I know the answers now. For example, it became clear how to organize the team work and distribute areas of responsibility. Many nuances have been discovered that greatly simplify and speed up the work. Another important point is communication with Norilsk colleagues and the exchange of life hacks within our community”, said Alexander Yatsenko, the NewPort LLC general director.

“I thought about revising the concept of our pizzeria Zhar.Pizza, which is now closed for repairs. Norilsk will develop as a new tourist and gastronomic center. Therefore, the training is organized very timely”, commented Oksana Babenko, the Zhar.Ptitsa group’s public catering department’s head.

“The result will be the existing restaurants and cafes restart and the service economy new objects opening. The project will help restaurateurs realize what the philosophy of their own businesses is, which will help form the gastronomic code of the territory”, said Oksana Bruyaka, specialist in business and investments at the NDA.

Chefs from the country’s best restaurants have already visited Norilsk, and bloggers, journalists and famous chefs have become participants in the Taimyr Salt gastro-expedition. The This Is Taimyr wrote that in Norilsk they make author’s northern ice cream and brew Arctic coffee.

Earlier, the NDA experts at the Krasnoyarsk Economic Forum took part in the design of a gastronomic attraction point in the region. At KEF-2023, the local cuisine of Taimyr was presented for the first time.
