The gastronomic festival Sever has already become a new brand of Taimyr. This year, due to the pandemic, the organizers changed the format: the gastrofest will be held online instead of in the open air. But on the other hand, Norilsk residents will have the opportunity to try themselves in the role of a chef without leaving their own apartment: they will be able to cook northern cuisine on air under the supervision of experienced chefs. And in order not to be mistaken with the proportions and ingredients, a courier will deliver a set of necessary products to the participants’ homes.
As the This is Taimyr already wrote, the gastronomic festival starts on Monday, July 27, and will last for five whole days. Norilsk chefs will share their signature recipes for reindeer and northern fish dishes. And on the eve of the most delicious event of the year, the first tasting took place at the Copper plant.
Today the dishes of the Sever gastronomic festival were tasted by the directors of the Nornickel Polar division, the city administration and the Norilsk Development Agency. The menu included potato salad with smoked smelt, venison meatballs with bean ragout, burbot cutlets with tomato sauce and rice. This is what will be served for lunch in the plants’ canteens throughout the coming festival week.
The menu was developed jointly with the chefs of Moscow restaurants. In five factory canteens, Nornickel employees will be offered various dishes, among which one of the major places is occupied by venison, which is well known to Norilsk people. They will serve beef stroganoff with mushrooms and cheese, steak with potatoes and fried cabbage, meatballs with bean stew.
The capital’s chefs have not forgotten about northern fish either. Diners will be offered potato salad with smoked smelt, fried smelt with baked potatoes and lecho, muksun stewed with daikon and fried with green peas and carrots. There will be 20 dishes in total in the festival lunch menu.
“I am glad that everything is made of our northern products, because we are famous for their quality and taste. Of course, I haven’t tasted everything, there are a lot of dishes. And this is great, I think that the company’s employees will like such a variety”, Nikolai Utkin, Director of the Nornickel Polar division, shared his impressions.
We remind that culinary master classes will begin next week at 19.00 every day on the Norilsk Development Agency’s YouTube channel. Experienced chefs will show everyone how to make unusual, but simple dishes of products familiar to northerners.
