Bellini Group to help develop Norilsk gastronomy industry

#ARCTIC. #SIBERIA. THIS IS TAIMYR. Three dozen owners, managers and chefs of Norilsk cafes and restaurants took part in a business mission in Krasnoyarsk organized by the Norilsk Development Agency (ARN) in partnership with the Siberian Federal University Gastronomy Institute and the Bellini Group. Its main goal is to improve the level of service and product quality in the catering sector in the northern city.


First of all, the participants got acquainted with the activities of the Siberian Federal University Gastronomy Institute. It is a Russian-French project, the first educational institution that provides higher education in the field of gastronomy. Students study restaurant management, emotional marketing in the hospitality industry, high school of gastronomy from the Paul Bocuse Institut (France) and strategic management. The university sends students for internships in the best restaurants in Russia and France. Thanks to cooperation with large restaurant chains, international companies and educational centers, students have the opportunity to receive grants for training and implementing business projects. Employers follow future managers from the first year, and they line up for graduates. The Institute is equipped with the most modern equipment. The practitioners who understand the intricacies of the restaurant business teach at the university.


“We want to be the initiators of gastronomic changes throughout Russia, both in terms of the culture of consumption and in terms of attitudes towards this profession. The institute ‘s mission is to educate a new generation of connoisseurs of Russian gastronomic traditions, which will develop the restaurant culture of the whole world. We conceived the institute as an innovative educational environment that will allow us to train highly qualified international-level managers for the hospitality industry. Close cooperation with the restaurant business allows the institute to promptly respond to its requests in the training of managers, chefs, marketers”, said Alexey Gorensky, the Bellini Group founder, the first russian Gastronomy Institute head.


As part of the business mission, a series of training presentations and lectures were organized by the Bellini Group leaders . It was about increasing efficiency in the restaurant business and the role of service in a catering establishment, the HR cycle in a restaurant group and the role of analytics, IT tools and modern restaurant marketing, lean manufacturing and strategic planning, as well as change management in turbulent times.

The final of the business mission was a strategic session. It discussed problems and measures to improve the catering sector in Norilsk. An acute shortage of personnel, complex and expensive logistics, and a lack of automation of business processes are the main pains. The Bellini Group professionals will prepare the Norilsk gastronomy industry development proposals, which are personnel remote training, providing easy access to the agricultural producers’ products in the Krasnoyarsk region, joint purchases, consumption increasing culture, gastronomic events and gastro-tourism development.


Maxim Mironov, Norilsk Development Agency head, noted that for the agency and the city as a whole, the service sphere development is one of the most important tasks, and the gastronomy industry is a key one, it is a life comfort and satisfaction level indicator.
