#ARCTIC. #SIBERIA. THIS IS TAIMYR. The document will become part of a comprehensive program for the sustainable development of the city until 2035. It is based on the author’s concept of 5G – Gastro-education, Gastro-science, Gastro-entrepreneurship, Gastro-culture, Gastro-tourism. The author is the Siberian Federal University Gastronomy Institute’s director, the Bellini Ecosystem managing partner Alexey Gorensky. He noted that work on the strategy lasted about a year and a half:
“In the process, we realized that the strategy could be the basis for the concept of the food culture changing throughout our country. At a recent meeting with president Vladimir Putin, we justified the need to develop a similar strategy for Russia, because many industries are tied to gastronomy that affect the quality of life and the development of a creative economy.
The president said he liked this approach. Norilsk will actually become a pilot territory for restarting the gastronomy industry.”
Now there are 170 catering establishments for 8600 persons in Norilsk. About 45 establishments – in the ready meals delivery format. This amount is quite enough to cover the needs of the 180 000th population of the city. The share of expenses for eating out in Norilsk is higher than in Moscow, St. Petersburg or Krasnoyarsk, which means that Norilsk residents love cafes and restaurants.
However, the industry market froze in development at the level of 2010. The level of service and the cost of dishes are affected by outdated concepts, lack of uniqueness, low level of technology, lack of the required level staff.
At the same time, Norilsk has strengths that can ensure gastronomic success. For example, quality local products – venison, northern fish, berries, the cohesion of the gastronomic community and its willingness to become a locomotive for change.
“The most important aspect is the education and implementation of training standards for industry specialists on the basis of our technical school”, said Maxim Mironov, the Norilsk Development Agency (NDA) director.
Recall that the gastronomy industry development strategy was developed as part of the project launched by the NDA with the Nornickel support to transform the catering industry. The strategy was created by specialists from the Siberian Federal University Gastronomy Institute, the Russian Academy of Medical Sciences and leading industry experts.
