Northerners to eat healthy Arctic food

Bread, desserts and other products will be stuffed with vitamins and microelements from northern berries, algae, pine needles and mushrooms.

#ARCTIC. #SIBERIA. THIS IS TAIMYR. Scientists have come up with a special diet for employees of northern enterprises. Such arctic food will help not only to satisfy hunger, but also to maintain the balance of useful nutrients in the body, the developers believe.

The project Clean Arctic tells about the development of scientists from the Moscow State University of Technology and Management (MGUTU) named after Razumovsky. They are implementing it together with the scientific and educational center Russian Arctic: New Materials, Technologies and Research Methods.

“As a matter of fact, we are not original in the applied concept. The specifics of our project is that we’ve developed products using Arctic natural ingredients”, said Igor Nikitin, head of the project, head of the department of biotechnology of food products from plant and animal raw materials at Moscow State University of Technology.

For example, the ingredients of the ‘northern’ bread are lingonberries, cranberries, cloudberries, pine nuts, kelp algae, fucus, pine needles, mushrooms grown in a unique way. Scientists grow the mushrooms in a nutrient medium and at the same time saturate them with various microelements turning them into a food supplement.

Here is an example of an enriched menu:

cake with seaweed – to compensate for iodine deficiency and lower blood sugar levels;

marshmallow with cloudberries – to protect the intestinal microflora;

chocolate bar with needles and cranberries – to replenish vitamins and minerals;

bread with honey and pine nuts, cloudberry puree – to strengthen the cardiovascular system.

At the second stage of the project, scientists will develop a digital platform that will collect and analyze information about each consumer.

“The profile owner will be able to regularly enter their height, weight, physiological characteristics, test data, daily nutrition into the database. And in response, the program will give recommendations for compiling a balanced diet, taking into account the characteristics of the person’s place of residence”, the developers said.

First of all, the service will work for northerners, since they suffer most from hypovitaminosis. In the future, it will be possible to create an individual nutrition program for any person anywhere in the world.

Recall that in Taimyr they are working on breeding for sale one of the most valuable fish species – Putorana char. We also told about the results of a study by scientists who found out that Taimyr venison is the richest in macro- and microelements.
