This fish with a cucumber smell is one of the few that is useful to both children and elderly people thanks to micro and macro elements, as well as essential fats. No less valuable quality – low calorie content.

The Norilsk residents, as fans of this symbol of the Taimyr spring, have already tried the traditional recipes of cooking the Yenisei smelt. But it is always interesting to look at a familiar product from a new perspective.

Mikhail Tsyplakov, chef of the Norilsk restaurant, treats northern cuisine with great respect. He says that today it is in the trend of world culinary.

“The popularity of Nordic cuisine is increasing. First of all, because fresh, high-quality, good products that nature gives are used for cooking”, said Mikhail.

For more than 20 years of work in the culinary industry, he has mastered various approaches and technologies for creating dishes and supports the principle of impromptu, when the composition of the ingredients is formed “in the course of the play”. Mikhail invented one of these dishes with smelt for the This is Taimyr and shared the recipe. Meet smelt fillet stewed in white wine with blanched zucchini and pumpkin puree with lingonberry sauce.

“We need 200 g of pumpkin, 2 cloves of garlic, a small onion (preferably shallot), 40 g of olive oil, 50 ml of cream, 2 smelts, 50 ml of white wine, 50 ml red wine, thyme, 1 zucchini, 50 g of cranberries, 30 g of honey and a little salad for decoration, Mikhail listed the ingredients in the order of their application. -, Fry onions and garlic in olive oil, add chopped pumpkin and a little water. Cover, reduce heat and simmer for 10 minutes. Then add the cream and bring to a boil.

Make mashed stewed vegetables using a blender.

Take the smelt. Open it, starting from the back, remove the ridge and entrails, cut off the head and let it stay in a frying pan for 2-3 minutes, adding white wine and thyme. Chop the zucchini and blanch, adding a little salt and sugar (you can use the same wine that you used earlier) for 30–40 seconds.

For the sauce, caramelize sugar, add salt, red wine, cranberries. Evaporate. Add honey.

Then the assembling begins: put the strips of zucchini onto a plate, put fish and mashed vegetables on top. Pour the vegetables with sauce, add salad and greens. Enjoy your meal!”

Norilsk residents can cook such smelt themselves in their home kitchen. Serve on weekdays and holidays. But you should remember: the fish is eaten very quickly and it is better to cook it in large quantities for the celebration.
